Recipes from the Chef - Peach Summer Salad
Hi again, The weather this summer has been a little wetter than expected but when we get those patches of sun I love nothing more than a salad full of fresh and vibrant fruit and veg.
Peaches are one of my favourite fruits but I will only ever eat them in season. Some years I’m lucky enough to be back in Ireland when they are in season, so I get to have them twice. This delicious tomato and peach salad is quick and easy to make with no cooking required.
Ingredients
2 Large tomatoes, cut in wedges
4 Large peaches, pitted and cut up
1/4 cup Red onion thinly sliced
1/4 cup Balsamic vinegar
1/4 cup Olive oil
Ground pepper to taste
Preparation
• In a large bowl, combine tomatoes, peaches and onions.
• Mix vinegar and olive oil and toss with tomatoes peach mixture.
• Season with freshly ground pepper.
• Cover and set aside, at room temperature, for one hour.
