Welcome to our Chef's Blog
Hello,
As the Executive Chef of Mercure Sydney Hotel I am delighted to welcome you to our very first blog.
One of the most interesting things about working in such a dynamic environment is coming into contact with such a broad range of people who come to the Mercure Sydney to eat, whether you may be a guest for the night, here at a conference or one of our regular customers for dinner.
It’s your feedback that has shaped the culinary direction of our food and beverage department, and as we are constantly evolving and changing our menus to keep up with seasonal and the best quality produce…and also your tastes, this September you will see a great new menu in our Four Elements Restaurant as well as on our Room Service Menu’s.
One of the main features of our team is that we collectively have such amazing knowledge and diversity, and strive to really harness that talent into the food that we put onto your plates.
We recently held an amazing Vietnamese dinner where we put all our culinary skills together to come up with the flavours of Vietnam, how funny it was when our Sous Chef Ganesh and I were running all over Chinatown in an attempt to find Banana blossom.... if you thought Banana’s were rare at the moment you should try shopping for the blossoms! I am happy to say that the night was a great success as you can see in the picture we had to produce just a one or two!
We have a lot of exciting ideas in the works over the coming months so thank you for joining me for the very first blog of many and we’re looking forward to bringing you more news and updates from the Mercure Sydney team.

P.S. I discovered today that Kikkoman just brought out a Gluten free soy sauce, which I think is the most amazing thing EVER.
