Today’s Human of Mercure Sydney is Jade Plunkett - the Revenue Manager! Essentially, she is responsible for analysing the market and pricing of our hotel according to the demand in Sydney.
What is/are your favourite thing(s) about the hotel?
The people! We have an amazing team here at Mercure Sydney – we all get in and support one another when it’s required, and we also know how to have a good laugh!
Is ice cream food? It’s dairy, and dairy is on the food pyramid, so yes, ICE CREAM!

How long have you been with the Mercure family?
Have been with the Mercure family for almost 2 years now, and have been with ACCOR for 10 years!
Who do you sit next to or work with and what is a fact about them you think we should know?
I sit in with the General Manager, Greg Brady, and you should know that he revels in a cup of tea at 3pm almost every day, and we take turns in making them for each other… Aaawwwww.
What is your best memory with Mercure Sydney?
Probably the most recent one was being part of ACCOR’s Amazing Race where Marina, Alexis and I were challenged - in amongst about 20 other hotel teams - to travel from Manly to Sydney Olympic Park via Sydney’s and Parramtta’s business district, completing challenges at each pit stop before proceeding onto the next one, and all in the name of charity. We came 4th!! An amazing effort, and so much fun!!
How would you sum up Mercure Sydney in three words?
Challenging, exciting, ambitious!
Where is your favourite place in the entire world and why?
Right now it would be the dance studio because of the freedom to perform, practice, listen to music, dance (of course!) and learn new moves all the while hanging out with friends!
What are some of your hobbies and interests?
I enjoy dancing, rock climbing, bouldering, canyoning, and anything to do with summer and the outdoors! As well as just hanging out with friends and family, and enjoying good food and wine.
Do you watch/play any sports, and if so, who is your favourite sports-person?
Not really. I enjoy rock climbing, and use to be into the F1s. Maybe say Schumacher or Webber??!!
